Fairy cakes with prosecco frosting

Okay so I’d feel like I was lying if I didn’t admit that I totally failed with these cupcakes and I’ll show you some photo’s of my failed attempts at the end of the post but the finished result is something that I’m actually really happy with and my boyfriend finished them off within a couple of days so I’m pretty sure he likes them too!




200g caster sugar

200g unsalted butter

4 eggs

200g self-raising flour

1 tsp baking powder

1 tsp vanilla extract


110g unsalted butter

320g icing sugar

5 tbsp prosecco



  1. Pre-Heat your oven to 190*C and line a muffin tin with cases
  2. Cream together the butter and sugar (an electric whisk is best for this) until light in colour and texture
  3. Add in your eggs one at a time and mix
  4. Add in the flour, baking powder and vanilla and mix together until evenly combined
  5. Carefully pour the mixture into the cupcake cases (I got 16 out of mine rather than 12 so don’t worry if you have some left over)
  6. Bake in the oven for 15-20 minutes or until risen and a slightly golden colour. You can always double check by inserting a toothpick and ensuring you it comes out clean
  7. Take out of the oven and allow to cool completely before icing (You can make your frosting while they cool)
  8. Sift the icing sugar into the butter and gently mix together (if you’re using an electric whisk, make sure you keep it on a slow setting to start with then gradually increase the speed) until it forms a thick paste
  9. Add in your Prosecco and mix until fully combined
  10. Cut a small hole in the middle of your cool cupcakes and carefully spoon the frosting into the hole. Pop the top back on your cupcake and it’s ready to go!

I didn’t add any extra decoration to mine because I thought they looked pretty as they were but you could always sift some icing sugar over the top for an extra flair!

Now here’s the part you’ve been waiting for… the failed attempt! As you can see, I was attempting to recreate something I’d seen on Pinterest but it really didn’t work and I ended up with a sloppy mess before deciding to turn my cupcakes into fairy cakes.
